Kimchi Pepperoni Pizza
An umami-packed combo that quickly became my favorite pizza topping.

Ingredients
- 1 ball sourdough pizza dough
- 113g (4 oz) mozzarella cheese (low-moisture, whole milk)
- 113g (4 oz) kimchi
- 113g (4 oz) sliced pepperoni
- 1 tsp dried oregano
- fresh basil leaves
- hot honey (optional)
Instructions
- Shred the mozzarella cheese and keep chilled.
- Stretch the pizza dough out, leaving room for the crust to rise.
- Using a large spoon or ladle, evenly apply the pizza sauce onto the stretched dough.
- Top the sauce with the dried oregano and shredded cheese.
- Add the sliced pepperoni and kimchi.
- Bake the pizza.
- Once done, garnish with hand-torn or thinly sliced basil leaves.
- Slice and serve immediately.
- Optionally (but highly recommended), drizzle hot honey over each slice.
