Mochi Brownies

Did you know that glutinous rice flour is actually gluten-free? Regardless, this recipe makes fantastic chewy brownies that are unlike any other.

  1. Preheat your oven to 350°F.
  2. In a bowl, combine the melted butter, eggs, warm whole milk, and vanilla extract.
  3. In a seperate bowl, combine the glutinous rice flour, sugar, salt, sifted cocoa powder, and baking soda.
  4. Combine the wet ingredients with the dry ingredients.
  5. Grease an 8x8 inch brownie pan (preferably with butter) and pour the batter into the pan. Tap the pan a few times on a flat surface to remove air bubbles.
  6. Top the batter with chopped chocolate and nuts.
  7. Bake for 1 hour at 350°F.
  8. Remove from oven and optionally top with flaky salt.
  9. Let cool and enjoy.
