Mochi Brownies
Did you know that glutinous rice flour is actually gluten-free? Regardless, this recipe makes fantastic chewy brownies that are unlike any other.

Ingredients
- 6 tbsp melted unsalted butter
- 2 large eggs
- 1 1/2 cups (360g) warm whole milk
- 1 tsp vanilla extract
- 1 cup (130g) glutinous rice flour
- 1 cup (200g) granulated sugar
- 1/4 tsp salt
- 1/3 cup (30g) sifted cocoa powder
- 1 1/2 tsp (9g) baking soda
- 1-2 chopped chocolate bars
- 1/2 cup (60g) chopped nuts, optional
- flaky salt, optional
Instructions
- Preheat your oven to 350°F.
- In a bowl, combine the melted butter, eggs, warm whole milk, and vanilla extract.
- In a seperate bowl, combine the glutinous rice flour, sugar, salt, sifted cocoa powder, and baking soda.
- Combine the wet ingredients with the dry ingredients.
- Grease an 8x8 inch brownie pan (preferably with butter) and pour the batter into the pan. Tap the pan a few times on a flat surface to remove air bubbles.
- Top the batter with chopped chocolate and nuts.
- Bake for 1 hour at 350°F.
- Remove from oven and optionally top with flaky salt.
- Let cool and enjoy.
